鸡�炒蛋 Fried Egg with Shredded Chicken
Ingredients :
鸡肉200克(切�)
蟹柳100克(切�)
�葱2棵(切粒)
蛋4至5粒
油3汤匙
鸡�的调味料A(腌鸡肉)
生抽1汤匙
麻油�茶匙
胡椒粉少许
生粉少许
调味料B
鸡精粉1茶匙
��茶匙
糖�茶匙
胡椒粉少许
上汤80毫�
Steps :
1)将鸡ä¸�åŠ å…¥è°ƒå‘³æ–™A拌匀,腌20分钟。
2)用油1汤匙,将鸡肉炒一下�出。
3ï¼‰å°†è›‹æ‰“æ•£ï¼ŒåŠ å…¥é¸¡ä¸�ã€�蟹柳ã€�é�’葱ã€�调味料B拌匀。
4)用油2汤匙,把镬烧çƒï¼Œå°†è›‹æ–™å€’入镬里,用ä¸å°�ç�«ç‚’。
5)蛋炒熟�起锅,洒上少许葱粒��。
Tips :
•é•¬ä¸�è¦�烧得过çƒï¼Œä»¥å…�烧焦。慢ç�«ç…Žå‡ºæ�¥çš„蛋,颜色美,味é�“香。
•å¦‚æžœè¦�å�ƒå¾—丰盛一些,å�¯ä»¥ä¸�用蟹柳,改用蟹肉。
Ingredients :
200g chicken (cut in shreds)
100g crabstick (cut in shreds)
2 stalks of spring onions (diced)
4 to 5 eggs
3 tablespoons of oil
Seasoning A (Chicken Marinade)
1 tablespoon of light soya sauce
1/2 teaspoon of sesame oil
Dash of pepper
Dash of corn flour
Seasoning B1 teaspoon of chicken stock powder
1/2 teaspoon of salt
1/2 teaspoon of sugar
Dash of pepper
80ml of stock
Steps :
1.Marinate shredded chicken into Seasoning A for 20 minutes.
2.Lightly fry chicken with 1 tablespoon oil and set aside.
3.Beat eggs, add shredded chicken, crabstick, spring onions and Seasoning B, then mix evenly.
4.Pre-heat 2 tablespoons of oil in a wok, place egg mixture in a wok and fry under low-medium heat.
5.Remove from heat when cooked, sprinkle with shallots and serve.
Tips :
•Do not overheat the wok. For optimal flavour and texture, fry eggs under a slow fire.
•Substitute crabstick with crab meat for a more sumptuous dish.
