Oven - 190C
Ingredients
2 ripe bananas (I use Del Monte)
2oz margarine/butter
5oz caster sugar
8oz self raising flour
2 eggs
pinch of salt
Method
1. Mash bananas
2. Cream margarine/butter & sugar
3. Beat in eggs
4. Add flour, salt & bananas - mix well
5. Put in greased loaf tin - 1 x 2lb tin or 2 x 1lb tins
6. Bake for about 1 hr until golden brown, springly to touch & shrinking slightly from sides of tins.
7. Turn out & cool on wire racks.
