This light herbal tonic is a neutral soup and is therefore suitable for all members of the family, regardless of age. Children like its sweet and meaty flavour.
Ingredients :
1 portion "Lok Mei" (available from Chinese herbal shops)
200g pork ribs
100g lean pork
1.5 litres water
1 teaspoon salt
1) Rinse the Lok Mei herbs.
2) Wash the pork ribs and scald in boiling water for 3 minutes. Rinse and drain.
3) Bring 1.5 litres of water to a boil before adding herbs and the ribs and lean pork. Cover pot and bring to a boil again and keep boiling for 15 minutes over high heat.
4) Lower heat and simmer the soup with the pot covered for 3.5 hours.
5) Season with a teaspoon of salt and serve soup and ingredients separately.
6) For babies, straing about 50ml soup into a boul. Cool the soup till it is lukewarm and feed the baby the soup stock in between mouthfuls of soft rice.
