Ingredients: Bai Mu Er (White fungus) a few 1 Green payaya Lean pork Gouzi (those tiny red seeds)
1. Wash all the ingredients. Then soak white fungus to soften it.
2. Peel the payaya, clear the seeds and cut into pieces.
3. Cut lean pork in big pieces and par-boil it in boiling water to get rid of smell and blood.
4. In a stockpot, boil some water and add lean pork, green payaya and gouzi. Cook in big fire for about 20 mins, then switch to small fire and boil for another 2 hours 40 mins.
5. Add in white fungus only about 1.5 hour before finishing. (This is because white fungus if added too early will cause the soup to be creamy as if added cornstarch).
