Ingredients (serve 2):
6 medium prawns or 4 large one
4 cloves garlic, peeled and minced
1 small bunch coriander, minced (I left this out as my kids doesn't like it)
2 tbsp mayonnaise
1 tbsp grated cheese (I used 1 slice cheddar cheese - cut to small piece)
salt and pepper to taste
chille flakes or paprika to garnish
Method:
1. Clean, trim and butterfly the prawns. Skewer the prawns to prevent them curling up while cooking.
2. Mix together the garlic, coriander, mayonnaise, cheese and salt. Season to taste.
3. Line a tray with baking foil and place the prawn skewers neatly on tray. Spoon the mayo mixture over the prawn (remember to flatten the prawns b4 putting the mayo mixture). Bake for 15-20 minutes in a 200 deg C preheated oven.
Cooking tips:
You can use a toaster oven to grill the prawns. Cook them 10 mins first and check. If prawns are not cooked, continue cooking in 10 mins bursts, always checking that they do not burn.
