Ingredients:
4 medium crabs, cleaned/washed and cut into pieces
200 g butter
150 g Fresh black peppercorns(pounded, use blender to do it)
1 tbsp salt
1 tbsp cooking wine
1 tbsp sesame oil
half cup of water
Method:
1. in a large wok, heat butter to melt.
2. add grounded pepper and salt.
3. fry for about one minute to mix the paste.
4. add water and crabs, and stir fry to coat the crabs.
5. add cooking wine and sesame oil.
6. cover the wok and leave to cook on medium fire/heat for 5 mins.
7. then turn off fire, stir fry to mix everything.
8. serve on large plate, garnish on top with fresh coriander.
alternatives to flavour :
you can use the expensive type of peppercorns sold in Cold Storage or Jasons Market Place(costs S$8.90 per bottle). It comes in a tiny glass bottle with a built-in grinder. It has 5 different flavours of peppercorn in it. It is called Rainbow Peppercorns.
err, use this sparingly..very expensive you know. Just use the regular black pepper first. Before serving, grind this expensive one on top to bring out the aromatic flavour !!
