Olive oil
Chopped garlic and cracked black pepper to taste
A light sprinkling of chilli flakes or chilli powder (if you like it spicy)
Carrots, pumpkin, potatoes, sweet potatoes, zucchini, large onions, capsicum, etc (cut into chunks)
1. Lightly coat the veges with olive oil and toss in the garlic, black pepper and chilli (if using).
2. Place on baking sheet and roast at 180C for 1/2 hour or until soft/crispy/etc, as you like.
3. Zucchini and capsicum may cook faster, so can take them out earlier or put them in later.
