1 kg baking potatoes
4tbsp butter, melted, plus extra for greasing
1/4 cup grated Parmesan cheese
salt & black pepper
parsley to garnish.
1. Slice the potatoes in half.
2. Put the potatoes into a buttered roasting pan, and brush with butter. Season with salt & butter.
3. Bake in 425F (220C) oven for 45 mins. Sprinkle the potatoes with 3tbsp of the Parmesan cheese and return to the oven till tender.
4. When done, sprinkle with the remaining cheese and garnish with parsley.
