Ingredients:
1kg back ribs
Marinate:
3-4 tbsp instant coffee powder (uses expresso coffee) dissolved in 3 tbsp water, 1 tbsp soy sauce, 2 tbsp Kahlua ( optional if you want it halal), 4 cloves garlic (minced), 4 shallots ( minced), 1 tbsp lemon juice and zest, 2 tbsp whole grain mustard, 1 tbsp sugar, 1 tsp chilli powder or cajun
Glazing:
2 tbsp maple syrup or honey, 1 tbsp instant coffee powder, 1 tbsp water
Thickening: 1 tbsp corn starch, 2 tbsp water, 1 tbsp maple syrup or honey
Method
1. Clean and pat dry back ribs. Mix the marinate ingredients and season the back ribs for minimum 2 hours. Save the marinate after seasoning
2. Roast the rib in a pre-heated to 250 degree oven for 8 minutes. Brush with glazing and lower the temperature to 200 degree and brush the ribs with galzing in every 15 minutes. Roast for a further 30-40 minutes till well done.
3. To make the sauce heat the remaining marinate in the saucepan and add the thickening to attain pouring consistency after boiled. Sweeten with extra honey or maple syrup if necessary
