One recipe makes about 9-10 sticks(w/o green onion)
Preheat oven at 250deg.
Ingredients:
600g chicken thigh meat(cut into cubes and dry it with kitchen towel)
6 stalks green onion (cut into short length)-optional
1 green pepper(cut into pieces same as chicken)
some satay sticks(soak in water for 1/2hr to prevent it getting all burnt)
Sauce: 1 rice bowl mirin(300ml)
5-6 tbsp dark soy sauce(japanese)
1. Boil mirin and bring a lighted matchstick to the edge of the pot. (warning: the whole pot of mirin will start burning furiously, pls have a fire extinguisher beside u and keep your hand & hair away while lighting
2. Add soya sauce and simmer on medium heat till sauce thickens(about 15mins)
3. Put the pot of hot sauce into a big bowl of ice & water to cool it down(if u have the time to wait, u can miss this step)
4. Season the chicken cubes for ½ an hour and add 1 tbsp of cooking oil.
5. Arrange all ingredients(incl chicken) onto the satay sticks.
6. Drizzle remaining sauce over the yakitori once.
7. Wrap the bottom tray with aluminium foil for easy cleaning later.
8. Grill at 250deg for 7-8mins each side(middle rack).
9) Sprinkle japanese 7-flavour seasoning.

4) Meat
5) Onion
6) Meat
7) Pepper

For me, i only have green and red pepper. So i put pepper/3 pcs of meat(not too tight together or it'll take a longer time to cook)/pepper then follow the same sequence over.
If you're preparing this menu for BBQ, do not throw the sauce away, brush it on while BBQ-ing.
