250g - 350 g sugar (sweetness is up to you)
300g coconut milk - 1 packet of kara & add water to make it 300g
2 pandan leaves
6 eggs
2 tbsp cornflour
A few drops green colouring
Beat eggs & sugar using balloon whisk till sugar dissolves.
Add coconut milk & flour alternately, mix till smooth.
Use a strainer & pour into non stick pot.
Add green colouring & pandan leaves or pandan paste.
Cook in medium heat & stir with balloon whisk.
Ensure the mixture is not lumpy at all times.
Turn to low heat as the mixture starts to thicken & keep on stirring until it bubbles to a boiling point.
Thickness of kaya is up to you.
Off heat & it's ready to eat.
