Ingredients:
250g Unsalted butter
190g Dark Brown Sugar
5 Eggs
30g Ground Almond
190g Plain Flour
1/2 tsp Baking Powder
1/2 tsp Cinnamon Powder
300-400g Mixed Fruit (depending on taste)
2 tbsp Rum Flavour
50g Pitted Prune (cubed)
50g Dried Apricot (cubed)
1 tbsp Treacle
1/2 tsp Nutmeg Powder
Method:
1. Mix butter, sugar and treacle until creamy.
2. Slowly add in the egg (one at a time) and rum flavour
3. Mix the flour, baking powder, cinnamon powder and
nutmeg powder and mix well. Then add in the mixed
fruit, pitted prune and dried apricot.
4. Pour in the mould and bake ata 170degrees for 1 hour.
If you wish, you could soak the mixed fruit in rum for a
few days to add flavour to your cake. I also plan to add
some walnuts the next round.
