Ingredients:
250g Butter
300g Caster Sugar
4 Eggs
200g Plain Flour
150g Self-Raising Flour
1/2 cup Milk
4 pcs Canned Pears (drained & cut into cubes)
1/2 tsp Ground Cinnamon
1/2 cup apricot jam, warmed and sieved
1 Fuji Apple, core and thickly sliced
Method:
1. Grease a 20-cm ring cake pan
2. Combine butter, sugar, eggs, flours and milk in a bowl
Beat on low speed for about 2-3 mins, then maximum speed
for about 5-6 mins till white and creamy.
3. Spread 2/3 of the cake mixture into the cake pan. Top with
canned pears which have been sprinkled with cinnamon.
Then cover the pears with remaining of the cake mixture.
4. Arrange apple slices around the top of the cake.
5. Bake at 180degress for about 1 hour.
6. Brush the apple slices with warm apricot jam (optional).
TIps
Make sure the canned pears are drained dry. You can use kitchen
towels to dry them too. Also make sure you have enough cake
mixture to cover the canned pears. The first time I tried, I poured
too much mixture the 1st round so I did not have enough for the
top, the cake turned out a little soggy. Otherwise its a really simple
recipe and with the sliced apples on top, really a very impressive!
