Ingredients
1 Graham Cracker Pie Crust (6 oz) - this is ready made
Filling
1 pkg (8oz) cream cheese softened (to soften put it in microwave for 15-20 seconds)
1/2 tsp vanilla
1/2 cup sugar
1 tbsp lemon juice
2 eggs
Topping
1 can (20oz) apple pie filling, chilled
2 tbsp toasted chopped pecans (to toast, put pecans on baking sheet in the oven for 3-5 minutes at 375 F)
1. Preheat oven at 325 F. Combine cream cheese, sugar, lemon juice and vanilla in a bowl. Mix until well blended.
2. Add eggs one at a time, mixing after each addition. Pour filling into the pie crust.
3. Put it on a baking sheet and bake for 25 mins or until inserted knife comes out clean. Cool the cheesecake and spread the apple filling evenly on top. Garnish with toasted pecans.
