400g flour
180g iced water
10g salt
10g caster sugar
80g unsalted butter
1/2 tsp vanilla flavour - optional
1/2 tsp butter oil - optional
150g pastry margarine
Put all ingredients EXCEPT pastry margarine in a mixing bowl.
Mix the dough preferably with hook attachment in low speed for 2-3 mins, turn to medium 1 min & finally high for about 3 mins.
Rest the dough for 15 mins. Keep it covered with a cloth.
Roll out to oblong shape. Roll pastry margarine to likewise & put on top of the dough.
Fold the dough into 3 equal lengths, roll & fold again for 3 more times.
Rest it in the fridge for 30 mins.
Take it out & roll out to 1/2 cm thick.
Cut 3 pieces 5" by 11" long.
Brush with egg wash & sprinkle with sugar.
Rest the dough for 20 mins.
Bake in preheated oven 200 deg. C for 20mins.
Let it cool & cut lengthwise into halves.
Put in filling.
Filling
2kg red/green apple skinned, sliced or cubed
1litre water
250g sugar
2 sticks cinnamon
Juice of 1 lemon
80g cornflour mixed with a bit of water to make paste
Boil water, sugar, cinnamon & lemon juice.
Add cornflour paste & stir smooth.
Turn off fire & add apples,s tir & cover.
Let it cool.
The chef gave shortcuts - buy prepared puff pastry - follow the instructions to bake.
Cut lenghtwise into halves.
