170g plain flour
1.5tsp baking powder
5 eggs
155g castor sugar
Method:
1. Pre-heat oven to 205C. Sift flour and b.p twice. Divide into two equal portions. Set aside.
2.Beat eggs and sugar till very thick and creamy. Divide into two portions.
3.Sift one portion of the flour mixture over one portion of egg mixture. Fold very lightly as for sponge recipes.
4. Spoon batter into greased and heated Kueh Bolu pans till 3/4 filled. Bake in 205C for 5 minutes then reduce heat to 150C till cake turns golden brown. Remove to cooling rack with fork.
5. Repeat with remaining egg and flour mixture.Wait till temperature reaches 205C before baking. Bake at once when batter is spooned into moulds. Do not leave to stand.
6. Cool cakes completely before storing in airtight container
